This recipe is simple, and makes decent hors d'oeuvres. It's also quick and easy to make, which is always a big plus in my book.
What you'll need:
- White salad mushrooms
- Bacon (turkey bacon is fine)
- Paper towels
Wash the mushrooms and cut the stems so they are level with the bottoms of the caps. Cut each piece of bacon in half the long way, so you end up with two long strips. Wrap a strip of bacon around the perimeter of each mushroom, and skewer it through with a toothpick to keep it in place. Microwave these as you would regular bacon, following the instructions on the package for how long to cook for however many strips you used.
After you take these out, blot off excess grease with a paper towel. If the bacon tends to unravel (as sometimes happens when using turkey bacon), leave the toothpick in place
