This was originally a recipe for sweet & sour chicken, but it's more like regular fried chicken, so that's what I'm calling it.

What you'll need:

1 pound of skinned, boneless chicken
    1 cup of all-purpose flour
Pepper and/or garlic powder, if desired
    1/2 cup of milk
    2 eggs
Oil for frying (I use canola)

Cut the chicken into bite-sized pieces. Put about an inch of oil in a small pot, or 1/2 inch in a frying pan. Heat to 350 degrees.

Whisk the eggs and milk in a small bowl, and mix the flour and seasonings in another. Dunk pieces of chicken in the egg and milk mixture, then coat them thoroughly with the flour. Fry the coated pieces in the hot oil and fry until deep golden brown. Turn if necessary to cook them evenly. Remove and drain on paper towels. Eat with some dipping sauce, if desired.
