Bento Recipes: Pita Pizza

Lazy person's pizzaThis is like the regular pizza recipe, except it's even easier because you don't even have to fool with dough. You just use pita bread for the crust. Can't beat that!

What you need:

  • pita bread
  • a greased cookie sheet
  • tomato sauce
  • cheese and other toppings, as desired

Lightly grease the cookie sheet with vegetable oil. Put unsliced & unopened pita bread on it, with the convex side down if it's not completely flat. (You want it to look like a bowl, not a hill.) Spread the sauce onto the bread, using the back of the spoon to distribute it evenly. Avoid "bald spots." Then drop on the cheese and whatever else you're using as toppings. After you've topped the pizzas to your heart's desire, bake these in a preheated 450 degree oven for 8-12 minutes, or until the cheese starts to brown.

One bento-friendly variation I've made is chibi pita pizza. Use mini-pitas, the ones about 2 or 3 inches across, instead of a full-size pita. those make perfect bento-size pizzas.
