First off, I'm not entirely sure this ought to be called a taco salad, as my knowledge of Mexican food is a bit hazy. The title's close enough for Gummint work, I say.

What you'll need:

    ground beef
    tomato sauce or spaghetti sauce (I use Ragu)
    iceberg lettuce
    cheddar cheese
    a tomato
    several 6" corn tortillas

How much of each? Use them in whatever proportions you like. You can also add other things like green onions and sour cream.

Brown the ground beef. While that's cooking you can grate the cheese and slice the lettuce up into small strips. Cut the tomato into small chunks too. When the beef is mostly browned, drain it well, then dump in some Ragu/tomato sauce, cover, and simmer over low heat for a while. You don't want to use too much, as it'll be very wet and sloppy if you do.

I pack this into my bento box by first lining it with a pair or tortillas, scooping in some meat, drizzling it with cheese, lettuce, and tomato, and finally covering it with another tortilla. (The tortilla lining is to avoid staining the light plastic box. I don't know that it's needed, and I don't really want to find out.)

To roll these into little burritos, put a little bit of each item in a line down the middle of a tortilla, leaving an inch of space on either end. Then roll it up into a simple tube and hope that it doesn't fall apart when you eat it.  Some say a dab of melted cheese can keep it from unrolling, but I haven't had much luck with that.
